Quick & Easy Recipe


I wish I had a picture to show you, but you're just going to have to trust me on this one. Years ago, we visited a great bagel place in Amarillo. Now, if you're from New York City, you have plenty of bagel places. In the Texas Panhandle, bagel places aren't that common.

This particular place, called New York Bagel Company, not only had bagels in the mornings, but they had all sorts of bagel sandwiches for lunch and dinner. I tried one with dijon, pastrami and provolone. It was broiled, so the cheese was gooey and yummy. The shop closed for good soon after we were there, so I started making bagel sandwiches at home. My son, who's 17 now, loves them so much that he'll ask for them for his birthday dinner.

I try to use wheat bagels. Spread on a layer of dijon mustard or dijonaise, if you want something a little lighter. Top with sliced pastrami and a slice of provolone, and broil till cheese is bubbly and gooey. That's it. Of course, you could substitute all sorts of meats and cheeses, and there's no rule that you have to broil the sandwich at all.

This is a really quick and easy lunch or dinner. We usually serve them with baby carrots and some grapes. Enjoy!

You have me worried. What about me (or Mary) makes you wonder how we're sisters? LOL

Yeah, that whole PB thing. Feeding 5 kids on a budget, we had to take our lunch to school every day for years. I think I was in 5th or 6th grade by the time my mom would let us eat in the cafeteria one day a week. When I shared that fact with my husband several years ago, he claimed that had to have been some sort of child abuse! LOL

Hey...I'll share my fave bagel sandwich...back from my college days...also a great little (open all hours) bagel place.

Cheddar melt: Wheat bagel, thick slice of ripe tomato,piece of crisp bacon and sharp cheddar.

toast the bagel layer the goodies wrap in foil and put in toaster oven or oven until cheese is melted.

My kids love this...and i have to do the tin foil bit, 'cause that is what reminds me of the original so much!

Sounds yummy, I never thought of a sandwich on a bagel. That's what I love about blogging, a fresh new way to look at things.

Sorry, Sandra, but PB still beats saltines and a garden hose, which is one of my ALL TIME favorite Sandra stories! ("Mama, let me in!")

One of my favorite things to make with a bagel is a veggie sandwich with cream cheese, cucumbers, and alfalfa sprouts.
